Last Thursday, April 13, 2023, guests were treated to an absolutely gastronomic feast at the Dusit Thani Lubi Plantation in Davao De Oro for Chefs On Tour, the hotel chain's first-of-its-kind two-day event where 12 of the best chefs in the country prepared 12 indulgent, fresh, and delectable dishes for their attendees. I was lucky to be invited and pleasantly enjoyed the night.
The roster of chefs was from LTB Philippines Chefs Association, an organization of culinary enthusiasts that promote Filipino cuisine and talents all over the world, namely: Chef James Antolin (Ikomai, Tochi desserts), Chef Sau Del Rosario (Sawsaw, Café Fleur), Chef Tom Bascon (M Dining), Chef Buddy Trinidad (Park Avenue Desserts), Chef Josh Boutwood (Helm, The Test Kitchen, Savage, Ember), Chef Gilbert Pangilinan (Kai, Cerveseria, The Blue Room, Manila House), Chef Jackie Ang Po (Fleur de Lys), Chef Carlo Miguel (Cloud Eats), Chef Tatung Sathou (Lore, Tatung's, Azadore), Chef J Brando Santos and Chef Kenneth Cacho (Unilever Food Solutions Philippines). Lastly, Dusit's very own executive chef Piya Suthasiri joined the line-up, bringing his vast experience around Asia and his signature approach to innovating Thai dishes.
The two-day event began at Dusit Thani Lubi Plantation Resort and we were treated to a beautiful sunset view while indulging ourselves. The night began when multi-awarded broadcaster Ces Orena-Drilon introduced the renowned chefs & their respective dishes for the night and prepared everyone for Torre Lorenzo Development Corporation CEO Tomas Lorenzo's welcome speech, where he stated, "We wanted to create this event because we at Dusit Davao do things out of the box. We do interesting events that would really change the landscape of dining, of entertainment."
And "out of the box" they did. I couldn't believe how seamless and relaxing the entire night felt. It might have been the Davao de Oro breeze or the way they artfully decorated the event but it seemed as if we welcomed the Summer season that very night. The dishes were accompanied with an abundance of beverages ranging from mocktails to a variety of spirits, making it impossible to not have any fun at all. Plus, the food was to die for.To. Die. For.
In his welcome message, General Manager Christoph Kuch also said, "Chefs on Tour is a culinary experience like no other, and we are proud that Dusit Davao has made it happen. We are honored to be in the presence of world-renowned Chefs sharing their expertise and passion, which shall all translate on tonight's menu."
We were given a little booklet we could have chefs stamp once we were done with their station. It made the evening feel even more relaxed as it entailed people to socialize as they partook in the dishes the chefs prepared. Thus, the night was made even more colorful with camaraderie through conversations. While the entire night is etched in gastronomic heaven, I particularly enjoyed two dishes:
Chef James Antolin's Ikomai Tuna Taco was the first on my list to try and when I did, I was floored by how much I loved it. I am usually not one to enjoy sriracha but it was a welcome flavor that elevated the combination of the ahi tuna, ikura, spring onions, and Japanese rice. It was definitely filling, though. This one, out of all the dishes, was the one I think I craved for most after the event.
Another dish that took my heart was Chef Carlo Miguel's Braised US Angus Short Ribs with parmesan polenta and herbs gremolata. While short ribs are known to be tougher than other premium cuts of meat, this dish was absolutely tender. I was using disposable wooden cutlery and yet it fell apart completely. Don't even get me started on the gremolata. The dish was hearty and incredibly indulgent.
The night was capped off by an incredible fire dance. Overall, the night was a perfect welcome to the Summer season. It's amazing how we can now experience events like these in Mindanao, let alone Davao. Torre Lorenzo Development Corporation and Dusit Thani Davao truly know their soirees. I unfortunately was not able to attend the second day held at DusitD2 Davao but know that the night was likewise a success.
